Hiking the Rainbow

The second half of my weekend was exactly what I needed to ready me for an immensely emotional week.  My last day at the current job is tomorrow and I’m jumping straight into the next position–which I’m really not too excited for, but at least it’ll be better.  You know that saying “leap and the net will appear”? Well, I listened to my intuition and I made the leap… but I’m still free-falling and waiting for that net.  Trusting the process is harder than it looks sometimes.

Oh how strangely perfect life truly is…

Ben and I started the our Sunday with a run at the park.  We’re doing the Maui Taco’s 5K this coming weekend (which is part of the Maui Marathon festivities) and Ben hasn’t been doing much running lately, so he ran about 2 miles while I did about 3 and a half.  We got home and I loaded up on protein with a spinach, zucchini & goat cheese omelet (recipe at the bottom of this page).

And then we left home for some much-needed outdoor adventuring!

We try to get into nature at least once  a week (we’ve got to enjoy the perks of living in paradise!) to reconnect with the ‘aina as well as each other (and ourselves).  To me, nature speaks volumes and offers me many answers.  I simply need to listen (or in this case, read).

The day was absolute bliss for me.  We went into the rainforest and hiked uphill for about an hour or so until we reached water.  To one side, a 65-foot waterfall looking down…

and to the other, the perfect swimming pond (without tourists!  Imagine that…).

I’m a total aquaholic so jumping into fresh water after a good sweaty hike made me such a happy camper!  Sunshine, friends, water, nature… honesly, how much better can it possibly get? 🙂

Over the course of the day I’m pretty sure I got the entire rainbow of colors in photos!

[Red : wild bananas and strawberry guava.]

[Orange : old trees and adolescent cows!]

[Yellow : ornamental ginger.]

[Green : ferns and pond grass.]

[Blue : sky and ocean.]

[Purple : wild flowers (mostly likely not native) and wild orchids (definitely not native).]

Banana flowers (what happens when you actually let the banana open up!) and awapuhi (shampoo ginger).

By far one of the best hikes I’ve been on in a while! I left the forest feeling rejuvenated, excited and alive!

Spinach, Zucchini & Goat Cheese Omelet

[Ingredients]

  • 2 whole eggs
  • 1 egg white
  • 1/2 medium onion
  • ~1/2 small zucchini (I used yellow)
  • 2 big handfuls of fresh spinach
  • .5 oz goat cheese

[+ a few spritzes of olive oil to coat the pan]

Sautee onions in a small pan until transparent.

Add zucchini and spinach until spinach is wilted.

Place veggies aside.


Beat the eggs in a small bowl.

Heat small pan to medium and lightly coat with olive oil.

Pour eggs into pan and gently mix eggs to keep from burning.

Flip eggs once there are a few bubbles and it has firmed up a bit.

Place veggies on top of eggs with goat cheese.

Fold eggs over.

Enjoy! Makes two servings (Ben and I shared this) or one large serving for the hungry.
