Eat Local Challenge: Kale Chips

Yesterday we picked up a few bunches of lacinato kale from the farmer’s market specifically to create kale chips.  I’ve been hearing about them so much lately and decided I would try my hand at a batch.  They are so quick and easy, super yummy straight out of the oven and packed with great nutrients and fiber!

Kale Chips

  • One big bunch of kale
  • 1 Tbsp olive oil
  • 1-2 cloves garlic
  • Hawaiian sea salt + fresh ground pepper to taste

Preheat oven to 375 degrees.

Chop kale into big pieces

Toss all ingredients together in a large bowl.

Bake in a single layer about 10 minutes or until golden brown.

Enjoy! The only thing I would do differently next time is wait until they’re all golden brown because they lost their crunch after a few hours.

Love this – can’t wait to try! I’m a kale fan, but never know what to do with it, so I never buy it. But this is so easy, how can you go wrong? Thanks for posting.
