Considering the fact that I have a newfound ‘onolicious addiction, I honestly can’t understand how I haven’t posted this recipe until now! I came across this recipe on a fellow food-blogger’s site and knew immediately that I wanted to try it. Conveniently named 5-Minute No Bake Peanut Butter Granola Bars, Anne uses rolled oats and crispy brown rice cereal as a base. I decided that I wanted to add a bit more nutritional bang by substituting the cereal for raw buckwheat groats! Not only does it make the bars a bit more substantial, it also adds great nutrients, fiber and protein.
Packed with nutritious seeds, these bars have such great flavor and are so ridiculously delicious you’ll have to stop yourself from eating the entire batch. Oh, and have I mentioned they’re super quick to make and are completely raw and vegan? Word. They are seriously everything I could have dreamt for in a snack bar!
Haley’s Dream Bars
[Dry (use scant measurements)]
1 3/4 c rolled oats
- 3/4 c raw buckwheat groats
- 1/4 c pumpkin seeds
- 1/4 c sunflower seeds
- 1/4 c chia seeds
- 1/4 c unsweetened coconut
- 1/8 c finely ground flaxseed
[Wet (use generous measurements)]
- 1/2 c brown rice syrup
- 1/3 C creamy peanut butter
- 1 tsp. vanilla extract
[honestly, with this much peanut butter, how could any recipe go wrong?]
Mix all dry ingredients together in a large bowl.
Mix together the wet ingredients in a separate, microwave safe, bowl.
Microwave the wet ingredients for approx. 20-30 seconds or until they mix together easily (this will make the ingredients easier to mix).
Pour wet ingredients into dry and mix well until everything is well distributed
Place the mixture into a shallow pan and flatten down.
Cut them into bars (will make 10 to 12). No worries if they’re still crumbly, they’ll bind in the fridge.
Store them in the fridge—either in the pan or in individual wrappers.
