[aka What Haley Ate Monday Winking smile]

Yesterday’s eats seemed to get weirder and weirder as the day progressed. 

It started off pretty routinely with a hot quinoa breakfast [as usual I ate half the serving before teaching and half after class].


[1/4 c quinoa + 1 Tbsp chia seeds + 1 c water + cinnamon + maca + protein powder]

Yesterday’s TurboKick class was a butt-kicker [literally – we did a few rounds of glutes at the end of class], which meant I had some extra calories to consume. 


After class, I ran a few errands.  I got hungry right around the time I got to Costco, so I had a handful of almonds followed by some blackberries + strawberries [oh how I miss the late summer in the Northwest… wild blackberries galore!].


Alright, here’s where it starts getting weird.  I really wanted chips, goat cheese + salsa for lunch, but I knew I had to bulk add some type of nutrients to the mix, so I rummaged through the cabinets and threw something really random together.  Let’s just call it a taco salad of sorts. Winking smile


[red leaf lettuce + 1/2 c refried black beans + goat cheese + salsa + corn chips]

Afternoon snack = homemade cereal + more berries…


followed by a thick slice of yacon [I told you it just kept getting weirder]…


[yacon is a radish-like veggie that originated in South America.  It is delicious ice cold from the fridge!  Super juicy!]

Finally, dinner was a bowl of chicken curry [organic free-range chicken breast + sweet potatoes + veggies]. 


What a randomly delicious day. Winking smile
